We’re all about pasture raised animals, good food, and having a damn good time doing it. Our shop runs by Wendell Berry’s line: “eat these good beasts that eat what you can’t eat.” Everything we do revolves around butchery, fermentation, and fire. We offer butchery classes, woodfired catering, and we’ve turned the shop into a full-on salumeria where we make our own salamis, bacon, pancetta, and a bunch of other rad stuff.
Come hang out with us! Join the Salami Chub Club and you’ll get member only invites to the monthly Steak and Frites pickup (Wine Club members come too). Every 2nd Friday we turn the place into a laid-back wine bar with grilled meats. And our famous Butcher’s Burger nights on the last Friday and Saturday of the month are not to be missed — fresh-ground burgers cooked over wood fire, crispy beef-fat fries, and big gooey brown-butter sea salt chocolate chip cookies.
We’re open Wednesday through Friday right now (hoping to add more days soon). Most of our meat goes out through shares, which you can purchase on our site, but the shop always has frozen sausages, cured meats, fresh cuts, and wine to grab and go. Swing by, say hi, and leave with something tasty.
